Antelope Rice – Cajun Style

What You Need:

 

One pound ground antelope

Three tablespoons olive oil

One teaspoon course ground black pepper

Half teaspoon salt

Three cloves minced garlic

One medium onion chopped

One cup diced red bell pepper

One cup diced green bell pepper

Half teaspoon cayenne pepper (more if you like it hot)

One eight ounce can tomato sauce

Four cups cooked white rice

 

What you do:

 

Blend the chili powder, onion powder, garlic powder, salt, red pepper and black pepper well and set aside. Now make eight quarter-pound burgers and sprinkle with the above blended spices. Cook over hot coals until medium done. Now spread a bit of the mayo/horseradish mixture on each Kaiser roll. Next add the lettuce, cooked burger and Swiss cheese and top off with any other condiment you might like. Put top of Kaiser roll on last, grab a cold drink, kick back and enjoy the spicy part of life.
