Azteca Antelope

What You Need:

 

Quarter cup raisins

Quarter cup apple juice

One pound Antelope steak – cut into thin strips

Two tablespoons olive oil

Three cups onion – sliced thin

One cup yellow bell pepper – sliced into strips

One jalapeno pepper – seeded and sliced thin

Four cloves garlic – minced

Quarter teaspoon dry thyme

One teaspoon ground cumin

Eight pimento stuffed olives – chopped

Four Roma tomatoes – cut into wedges

Four to six cups cooked white rice

 

What you do:

 

Combine apple juice and raisins and let stand for thirty minutes. Put olive oil in a nonstick fry pan on medium heat and add the bell pepper, onions and jalapeno pepper and saute for twelve minutes. Next add the steak and garlic and set on medium high heat and brown. Now add the raisin mixture, thyme, cumin, olives and tomatoes. Reduce heat and simmer for about five minutes, all the while stiring. Now pour over cooked rice and serve family style.
