Northwest Fisherman’s Delight

What you need.

One pound halibut (or other white fleshed fish) cubed

One pound medium uncooked shrimp-peeled and cleaned

Half pound fresh sliced mushrooms

One cup thinly sliced celery

One medium onion quartered

Two cloves garlic- minced

Two tablespoons olive oil

Two tablespoons butter or margarine

Half teaspoon black pepper

Half teaspoon white pepper

Half teaspoon salt

One cup half and half

Two tablespoons flour

One cup cubed cheddar cheese

One package shell pasta or pasta of choice

 

What you do.

Cook pasta, being careful not to overcook, drain and keep warm. In a large skillet add the olive oil and butter. Melt on medium high heat, add the onions, celery, mushrooms and garlic. Cook until onion segments are opaque and begin to fall apart. Now, add the halibut and cook for five minutes and then add the shrimp. Cook for an additional five minutes or until fish and shrimp are fully cooked. While fish and shrimp are cooking prepare the sauce. Mix the flour with the cold half and half until smooth. In a double boiler or pan heat the half and half stirring constantly. When hot add the pepper, salt and cubed cheese. Stir until cheese is melted and the mixture is creamy smooth. Place the pasta on a warm serving platter and arrange the fish and shrimp mixture over the pasta. Now pour the cheese mixture over the fish and pasta. It goes great with a tossed salad and hot Italian or French bread.
