Old Southwest Style Game Birds

What you need:

 

2 pounds of grouse breast or other birds

1 fresh jalapeno pepper, seeded and diced

1 can tomato sauce (15 oz)

1 can chopped tomatoes with juice (15 oz)

3 cloves garlic, minced

1/2 bell pepper, diced

1 small onion, chopped

1 teaspoon pepper

1/2 cilantro, chopped

1 cup jack cheese, shredded

4 to 6 cups cooked white rice

 

What you do:

Bone out the bird breasts and dice into one inch cubes. In a pan lightly coated with olive oil, brown the chunks of breast for about four minutes on medium high heat and remove from the pan.

Except for the rice, cheese and bird breasts, add all the rest of the ingredients to a large pot and bring to a slow simmer and cook for 25 minutes.

Now add the cooked breasts and heat it with the sauce for about five minutes.

On individual serving platters put a portion of rice and the bird mixture and sprinkle some Jack cheese over each serving.
