One Pot Venison

What you need.

One to two pounds venison steak cut into one inch squares

Three to four large potatoes peeled and quartered

One medium onion quartered

One teaspoon black pepper

Twelve to fifteen baby carrots

One celery stalk sliced

Three tablespoons olive oil

Two cups beef broth

Two cloves minced garlic

Two tablespoons flour

 

What you do.

Heat the olive oil and add the garlic and steak. Brown steak for about five minutes and then remove from the pan. Next, add the potatoes, carrots, celery and brown for five minutes in the steak juices and add one cup of beef broth, reserving the other cup of beef broth. Cook for twenty minutes. make sure it doesn’t stick to the pan by stirring periodically. Now mix the flour with the remaining cup of cold broth, being sure there are no lumps. When the potatoes seem about done add the flour and broth mixture and simmer until the ingredients thicken. Serve with hot buttered home made bread and you have a great cold weather meal.
