Popcorn Pike

What you need:

1 to 2 pounds of pike fillets cut into 1- to 2-inch squares

2 cups graham crackers finely crumbled (food processor does great)

2 cups crushed saltine crackers (unsalted for salt restricted diets)

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon granulated garlic or garlic salt

6 beaten eggs (milk can be substituted)

Canola oil for frying

 

What you do:

Combine the graham crackers and the saltines with the pepper and garlic in a resealable plastic bag and mix well.

Soak the fish in the eggs or milk then coat with the crackers.

Heat the oil and cook the fish until it is golden brown on each side. It just takes a few minutes.

Any leftovers taste great the next day as a snack, just like popcorn.
