Red Beans And Rice

What you need.

Half pound smoked venison sausage of choice – sliced or diced

One green bell pepper – diced

Two 14 oz. cans diced Mexican style tomatoes with juice

One tablespoon hot Cajun seasoning

One medium onion – chopped

Two cans red beans – with juice

Quarter cup olive oil

Six to eight cups cooked white rice

 

What you do.

In a large pot brown sausage and onions in the olive oil. Add all the other ingredients and heat all the way through. Serves four to six people. I like to use this rise as a bed for roasted game birds.
