Salmon Fish Loaf
What you need:
Two pounds cooked and boned salmon or trout
One cup milk
One cup salt free crushed crackers
Two cups bread crumbs
One medium onion chopped
One tablespoons dried parsley
Half teaspoon black pepper
Half teaspoon salt
What you do
Mix the fish with all the ingredients, except for the mayonnaise. Next take a loaf pan (or baking dish) and coat with vegetable spray. Fill the loaf pan with the fish mixture and lightly spread the mayonnaise over the top.
Put pan in a pre-heated 350 degree oven and cook for approximately 45 minutes to an hour.
Serve with fresh steamed vegetables and boiled red potatoes. Makes for delicious sandwiches for the next day’s lunch.
