Venison Mexican Meat Loaf

What you need.

Half cup chopped onion

Half cup chopped green bell peppers

One seeded and minced jalapeno pepper

Half teaspoon black pepper

Teaspoon salt

Two tablespoon red chili pepper

Two teaspoons ground cumin

Two garlic cloves minced

Four taco shells – crushed fine (food processor will do well for this part)

Two eggs

One can pinto or black beans – rinsed and drained

Two pounds ground venison

 

What you do.

In a large bowl mix the first eleven ingredients and then slowly add the ground venison and blend well. Spray a loaf pan with cooking spray and add the meat mixture. cook in a pre heated 375 degree oven for one hour or until meat tests out at 160 degrees internal temperature. Remove from oven and let stand for at least ten minutes before slicing. Serve on a bed of flour or corn tortillas with salsa of choice. A cold beverage goes well with this tasty meal.
