Venison Pizza

What you need (pizza sauce ingredients).

One 15 oz. can tomato sauce

Quarter cup olive oil

Two tablespoons oregano

One teaspoon black pepper

Salt to taste

One teaspoon granulated or powdered garlic

Blend all above ingredients well

 

Venison sausage recipe.

Half pound ground venison

Half pound course ground lean pork

Two teaspoon fennel seed

Salt to taste (at least one teaspoon)

Half teaspoon red pepper

Half teaspoon black pepper

Half teaspoon sugar

Mix all above together well

 

Pizza cheese

One pound grated Mozzarella cheese

Half pound sliced or grated Provolone cheese

Four ounces grated Parmesan cheese

 

What you do. Prepare sauce and venison sausage ahead of time. Use your dough recipe of choice or pre made commercial dough. Form your dough by hand, its fun to toss it, or use rolling pin to form your crust. Make two 12 inch crusts, put on appropriate pizza pans or cookie sheets and use half the sauce on each pizza, spreading evenly over each. Next, take the Mozzarella cheese and sprinkle half over each pizza, followed by half the Provolone cheese and then the grated Parmesan cheese on each. Take the sausage and put half on each pizza by pinching small pieces of sausage and covering pizza evenly. Now you can add any other toppings you like, such as mushrooms, onions, pepperoni and bell peppers. Put into 475 to 500 degree oven and bake for twenty minutes or until dough crust is evenly browned and crispy. The secret to a crisp crust is the hot oven temperature.
