What you need.
One pound ground game burger
Six to eight green or red bell peppers
Two cups cooked white rice
Two cloves garlic – minced
One small onion chopped
Half teaspoon ground black pepper
Half teaspoon cumin
Half teaspoon oregano
Two teaspoons chili powder
One (14 1/2) oz. can of jalapeno flavored chopped tomatoes
Two cups Monterey Jack cheese – grated
One small can chopped black olives
What you do.
Cut the tops off the bell peppers and clean out the seeds and membrane. Boil for four or five minutes in water and drain and set aside.
In a large fry pan, cook the burger, onion, and garlic until burger is browned. Next, add the remaining ingredients, except for the olives and cheese, and simmer for ten minutes and remove from stove.
Stuff the peppers with the rice and meat mixture and put in a baking dish. Top the stuffed peppers with the cheese and olives and bake in a preheated 350 degree oven for fifteen minutes. Serve with hot tortillas and enjoy.
