Grouse Gumbo

What you need.

Two grouse breasts – cleaned and diced

Half pound of your favorite spicy game sausage – cut into thick slice

Quarter cup canola oil

Three quarter cup flour

Four cups chicken broth

One small package frozen okra (defrosted}

Half cup chopped onions

Half cup chopped celery

Quarter cup chopped pimentos

Three cloves minced garlic

Half teaspoon course ground black pepper

Half teaspoon ground red pepper

Two bay leaves

Four cups cooked brown rice

Salt to taste

 

What you do.

Cook the brown rice ahead of time using the package instructions, except you can substitute chicken broth instead of using water. I think it enhances the rice flavor.

Now take a large pot or a Dutch oven and pour in the oil and heat it up. Now add the flour to it stirring until the flour and oil mixture turns brown and forms a roux. Do not burn the flour. Now slowly stir in the broth and stir well. Next add all the ingredients except for the rice. Bring to a boil, lower to a simmer and cook for twenty minutes stirring frequently so as not to stick to bottom of pan. Remove the bay leaves and remove from heat. Serve in individual bowls over the cooked rice. Goes great with fresh baked bread or corn muffins.
