Rubbed whitefish with Zucchini omelet

This is normally the time of year when those big lake Superior Whitefish in Flathead lake start on a good bite. When they are freshly caught they are absolutely great to eat. The flesh is delicate and sweet. Let’s make a batch of Rubbed whitefish with Zucchini omelet.

What you need.

Two pounds Lake Superior Whitefish or sub mountain whitefish – filleted skinned and boned

Fish Rub

Two tablespoons grated Parmesan cheese

Two teaspoon dry sweet basil

Two teaspoon dried rosemary

Quarter teaspoon garlic powder

Quarter teaspoon salt

Half teaspoon ground red pepper

 

Zucchini and egg recipe

One small zucchini thinly sliced

Six large eggs beaten well

Half red bell pepper chopped

One cup sliced fresh mushrooms

Grated parmesan cheese

Salt and pepper to taste

 

What you do.

In a large Zip-loc bag put all the fish rub ingredients and blend well. Add the whitefish fillets And generously coat them with the rub. Lightly oil a non stick fry pan with olive oil and fry the fillets until golden on each side. Remove and keep warm.

Mix well all ingredients for the zucchini with the eggs. Take one cup of egg mixture and fry in a pan lightly coated with olive oil. Sprinkle with the Parmesan cheese and serve each cup of zucchini omelet with a portion of whitefish.
