Chunky Wild Turkey Soup

Wondering what to do with that slightly damaged turkey in the freezer? It might be a bit shot up but can be rescued. Make a batch of Chunky Wild Turkey Soup. It is a bit spicy but will warm your insides.

 

What you need.

One pound wild turkey breast or more if you like – cut into bite size pieces

Six to eight cups turkey or chicken broth

One medium onion – chopped

One small package frozen corn

One four ounce can chopped green chilies

Two tablespoons chili powder

Half teaspoon ground pepper

Half teaspoon ground red pepper

Two green onions sliced diagonally including stem

Half cup white rice

 

What you do.

Bring the broth and turkey to a boil. Lower to a simmer and cook for twenty minutes. Except for the green onion, add all remaining ingredients. Simmer until rice is done and turn heat off. Let set for five minutes and place in a large soup terrine and sprinkle the top with the sliced green onion. Goes great with flour tortillas that are topped with jack cheese and heated.
