elk and bean chili

Vinnie’s Southwest Elk and Beans

Here is a great cold weather bean dish. I call it Vinnie’s Southwest Elk and Beans. This recipe can be used with other big game burger meat. It is a one pot meal that makes it easy to prepare.


What you need.

One pound elk burger

One 15 oz. can pinto beans

One 15 oz can kidney beans

One medium size onion – chopped

Two 14 oz cans of chopped tomatoes

Two cloves minced garlic

Two to three smoked ham hocks

Two to three tablespoons of dark chili powder

Three tablespoons olive oil – to brown the meat,garlic and onion


What you do.

Heat olive oil in large pan and add the onion, garlic and ground meat. Cook until meat is browned. Next add all the other ingredients. Now bring to a simmer and cover. Stir often so the ingredients do not stick to pan. After an hour remove the hocks and take meat off and add to the pot of beans and cook an additional fifteen minutes. Serve as a meal with warmed tortillas or as a side dish.
