Rubbed Whitefish Over Angel Hair Pasta

What you need.

Two pounds of whitefish fillets – skinned and boned

One pound angle hair pasta

Olive oil

Three cloves garlic – minced

Grated Parmesan cheese

Fresh sweet basil – about one to two ounces to garnish serving platter

Whitefish rub recipe:

Two tablespoons course ground pepper

Two tablespoons grated parmesan or Romano cheese

Two tablespoons dried sweet basil

Two teaspoons dried rosemary

Half teaspoon garlic powder

Half teaspoon salt

One teaspoon ground red pepper

Mix all ingredients together well

 

What you do.

Prepare a pot of boiling water for the pasta and salt the water lightly and then add a tablespoon of olive oil. When fish has been prepared, cook the pasta according to the package instructions. Drain the pasta well and arrange on a large serving platter garnished around the edges with fresh leaves of sweet basil

Rub whitefish fillets with the prepared rub.. Next in a large fry pan pour enough olive oil and fry the fish fillets. It will only takes two to four minutes for each side of each fillet. Fish will flake when done. Next add about a quarter cup of olive oil to the same pan and lightly brown the minced garlic. Pour the browned garlic and olive oil over the pasta and layer the fried fillets over the pasta. Next, sprinkle with the grated parmesan cheese. Serve with a tossed green salad and a glass of white wine and enjoy.
