Broiled Salmon And Pine Nuts

What You Need:

Four Salmon steaks — 6 oz. ea.

Butter or margarine

Salt and pepper to taste

Four green onion with tops – sliced thin diagonally

Three tablespoons lemon

Two ounces (more if you like) pine nuts

Two tablespoons fresh green parsley – chopped fine

Four ounces fresh mushrooms sliced thin

 

What you do:

Baste each salmon steak with butter and salt and pepper to taste. Then preheat a broiler or bar-b-que and put on the steaks and cook about six to eight minutes on each side or until the salmon just flakes and is done. do not overcook. While the salmon is cooking take all the rest of the ingredients, except for the pine nuts, and mix well. Now in a small fry pan melt three to four tablespoons of butter and add the pine nuts and cook until golden in color and now add other mixed ingredients to the pan. Cook on medium high heat until heated all the way through. Remove the steaks from the broiler and put equal portions on each steak. Serve with fresh salad and melon slices.
