This is a great recipe to fire up right on the shore. With a little preparation prior to your outing you can cook up a fantastic meal with last weekends fish. Or, if you are confident in your abilities you can bring the rest of the ingredients and plan on cooking this fresh with the mornings fish that you catch.

What you need.

Fresh walleye fillets

One or two cans of new potatoes

One small onion sliced

Red bell pepper – cleaned and diced

Salt and pepper to taste

Two green onions sliced thin

Four ounces fresh sliced mushrooms

Flour – to coat fish

Canola oil or butter to fry the fish

What you do.

Prepare all your fresh ingredients ahead of time and place into zip lock bags. Makes for easy use in the field. In a large fry pan pour some oil and heat. Now add the potatoes, onions, bell peppers, mushrooms and salt and pepper to taste. Cook until the potatoes are beginning to brown. Remove from the pan, cover and keep warm. Now into another zip lock bag pour the flour and add the fresh walleye fillets. Cook until the fish browns a bit on each side and the fish begins to flake. Serve with the spuds and onion mixture. It just doesn’t get any better than a fresh shore lunch. Goes great with a cold beverage of choice.
