Antelope Taco Soup

A great combination of hunting, mexico and soup! Perfect for any day you need to warm up with a little ARRIBA!

 

 

What You Need:

Two pounds ground Antelope

One medium onion chopped

Three cloves minced garlic

One 7 oz. can chopped green peppers

One 16 oz. can whole kernel corn with juice

One cup water

One 16 oz. can chopped tomatoes with juice

One 16 oz. can kidney beans with juice

One 8 oz. can tomato sauce

One package taco seasoning – large for two pounds of ground meat

Two cups grated cheddar cheese

Pkg. of six inch flour or corn tortillas

 

What You Do:

Brown the Antelope meat with the garlic and onions in a large pot. Now add all the rest of the ingredients except for the cheese. Simmer for one hour and serve in soup bowls and top off each with the grated cheese. Serve with corn chips and heated tortillas.
