Venison Bean and Sausage Soup

If you have venison or elk scraps made into sausage you will enjoy the following recipe. It is one that is great on a cold winters day. Simple to prepare and a one pot meal. It is simply called Venison Bean and Sausage Soup.

What You Need

One pound venison or elk sausage – sliced into quarter inch pieces

Two cans 15 oz Great Northern beans with juice One can navy beans with juice

Half cup diced smoked ham One cup chopped onions

One cup sliced baby carrots Six cups chicken broth Salt if you need

Two cups new potatoes diced Two celery stalks – sliced thin

What You Do

Combine all the above ingredients into a stock pot and simmer for forty minutes. Let the soup set for five minutes after turning off heat and then serve.
