Apples And Elk Loin

What You Need:

 

One to two pound loin (elk or deer)

Six tablespoons maple syrup

Three tablespoons Dijon mustard

Half teaspoon salt

Quarter teaspoon ground red pepper

One teaspoon dried rosemary

One clove minced garlic (finely minced)

Four large Granny Smith apples – peeled, cored and sliced thin

 

What you do:

 

Preheat oven to 425 degrees and coat a broiler pan with cooking spray. Combine the mustard, garlic, two tablespoons syrup, salt, pepper, and rosemary. Blend together well and baste the loin with the mixture. Bake in oven until medium done (about twenty to thirty minutes) Spray a nonstick skillet with cooking spray and heat pan on medium high heat. Now add the sliced apples and simmer for five minutes and then add the rest of the maple syrup and cook for an additional twelve to fifteen minutes. Slice the game loin and serve with a small portion of the cooked apple slices. Garnish and serve with buttered steamed rice.
