Wild Turkey And Sausage Jambalaya

What You Need:

  • One turkey breast – cut into one inch cubes
  • One pound smoked venison sausage links of choice – sliced into large pieces
  • One can okra – sliced – with juiceQuarter cup corn oilTwo tablespoons butter
  • One bell pepper – seeded and chopped
  • One large onion – chopped
  • Four stalks celery – chopped
  • Four cloves garlic – minced
  • Two cans (15 oz.) chicken broth
  • Two cans chopped tomatoes – Mexican style – with juice
  • Half teaspoon black pepper
  • Quarter teaspoon ground red pepper
  • Four cups cooked white rice

 

What You Do:

In a large stock pot add the oil and brown the turkey and sausage then remove from the pot. Now in the same pot add the bell pepper, onion, celery, garlic and butter and cook for five minutes.

Add the rest of the ingredients, excluding the rice, but including the turkey and sausage, and cook covered for about forty-five minutes at a simmer, stirring and making sure it doesn’t stick.

Now add the rice stir well into the mix and heat throughout. Feeds a large hungry crowd of six to eight folks. Serve with hot bread and salad.
