Wild Turkey Jambalaya

What You Need

  • One turkey breast cut into one inch cubes
  • One pound smoked venison sausage links cut into large pieces (six pieces per quarter pound link)
  • One can sliced okra – with juice
  • Quarter cup corn oil
  • Two tablespoons butter
  • One bell pepper – seeded and chopped
  • One large onion – chopped
  • Four cloves garlic – minced
  • Two 15 oz. cans chicken broth
  • Two cans Mexican style or Cajun style chopped tomatoes with juice
  • One teaspoon black pepper
  • Quarter teaspoon ground red pepper
  • Four cups cooked white rice

 

What You Do

In a large stock pot heat the oil and add the turkey and sausage and cook for five minutes to brown the meat. Next add all the ingredients, Except for the cooked white rice.

Cover and simmer for forty-five minutes, being sure to occasionally stir so as not to stick to bottom of pan. Now, add the cooked rice and heat. Feeds a large group who will most likely ask for second helpings.
