Tex-Mex Balls

What You Need:

One pound ground game burger

Six to eight red or green bell peppers – depending on size

Two cups cooked white rice

Two cloves garlic – minced

One small onion – chopped

Half teaspoon ground black pepper

Half teaspoon cumin

Half teaspoon oregano

Two teaspoons chili powder

One 14 ounce can diced tomatoes with jalapeno (drained)

Two cups grated Monterey Jack Cheese

One small can chopped black olives

 

What You Do:

Cut the tops of the bell peppers and clean out the seeds and membrane.

Boil for about five minutes in water, drain and set aside to cool. In a fry pan fry the onions, garlic and burger until all is browned. Now add the rest of the ingredients except for the cheese and olives.

Simmer for ten minutes and remove from stove. Blend the cooked rice and meat mixture well and stuff each bell pepper. Top off first,each pepper with the cheese and sprinkle the stuffed peppers with the chopped olives.

Put in a preheated 350 degree oven for fifteen minutes. You might want to add hot sauce of your choice. Serve with hot tortillas and enjoy.
