Lake Trout Potato Salad Recipe

Are you a fan of lake trout?  Are you a fan of potato salad?  If you answered yes to both of those questions, you might want to give the following recipe, from cooks.com, a try:

FISH AND POTATO SALAD

  • 1 lb. fish (lake trout, or your choice)
  • 1 onion, minced
  • 2 to 3 potatoes, cooked and cut in 1 inch cubes
  • 2 sour pickles, minced
  • 1 (10 oz.) pkg. frozen peas
  • 2 tbsp. horseradish
  • 2 to 3 tbsp. mayonnaise
  • 2 tbsp. minced dill and celery leaves

Steam or boil fish. If fresh, cool and cut in small pieces. Combine with other ingredients and salt and pepper. Garnish with parsley, olives, capers, and sliced hard boiled eggs.

(Top it with bacon to add some extra flavor!!)
