When you think of soup, fish might not be the first thing that comes to mind…until now. I discovered a phenomenal recipe, posted on dwfonline.com, that shows you a great way to cook that walleye you have caught, or are going to catch. It is described as “a delicious, artery-clogging, stroke-inducing soup/chowder that just begs to be modified to your individual taste! Substitute freely to suit your taste and serve with crusty bread!”

Decadent Walleye/Bacon/Wild Rice/Cream Soup
- 1 Medium Onion
- 1 Carrot
- 1 Stalk Celery Diced
- ½ Cup Butter
- ½ Cup Flour
- 1-½ Cups Water
- 3 Cups Chicken Stock
- ¾ Cup Diced Bacon, Ham or Canadian bacon
- Walleye fillets cut in small chunks
- 1-1/2 Cups Cooked Wild Rice
- 1 Cup Shredded Cheddar Cheese
- 2 Cups ½ & ½ Cream
- Salt & Pepper to Taste
- Hot Sauce
Sauté onions, carrot and celery in butter until onion is clear, add flour, cook 3-5 minutes.
Using a wire whip blend in water and stock.
Bring to a boil stirring constantly.
Reduce heat, and add remaining ingredients and simmer for 20 minutes.
Makes 10 servings
