Thai Elk-Steak Salad

Elk is the best meat to top this salad recipe but, pork, beef, or even poultry will do. The best part is in the marinade:

Marinate meat with sugar, fish sauce and pepper for 15 minutes. Grill or broil it until done to desired degree. Let meat rest, then slice and set aside…Here are the ingredients: 1 crushed chili pepper, ½ T fish sauce, 1 T sugar

And here is the rest of the recipe:

1 tsp sugar

Pinch of pepper

½ T seasoning sauce

½ C sliced onion

1 green onion, sliced

½ tomato, sliced into thin pieces

½ cucumber sliced

¼ C sliced red and green bell pepper

½ C sliced carrot

1 small head of lettuce

Cilantro and or mint for garnish

Dressing

2T fish sauce

4T lime juice

3 cloves garlic, minced

½ T dried chili pepper flake (optional)

1 T crushed roasted peanuts (optional)

Directions:

Marinate meat with sugar, fish sauce and pepper for 15 minutes. Grill or broil it until done to desired degree. Let meat rest, then slice and set aside.

Line a large platter with lettuce. Arrange all ingredients on top of lettuce and pour dressing over all ingredients. Garnish with cilantro and mint. Top with grilled meat.
