Angler’s Breakfast – Fish Pancakes

l_R182430I imagine you could try this out with any type of fish you catch, and I’m not sure if the “Asian fish” part is referring to carp, but I think I will wait to see how it tastes from our listeners and montanaoutdoor.com fans before I cook it myself.  The combination of the words “fish” and “pancakes” don’t sit well with me, but if you try this recipe for fish pancakes, let us know what you think!
Asian Fish Pancakes
INGREDIENTS:

  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 egg
  • 1 cup cooked flaked fish
  • 2 scallions, sliced
  • 1 red chile, minced
  • 2 teaspoons oil
  • Soy sauce
DIRECTIONS:

  1. Whisk together 2/3 cup water, flour, salt and egg. Stir in fish, scallions and chile. In 8-inch nonstick skillet, heat 1/2 tsp. oil. Spread 1/3 cup batter to fit skillet. Fry both sides until golden. Repeat with remaining oil and batter. Serve with soy sauce.
