Coffee Can Huckleberry Ice Cream Recipe!

Kids will be heading back to school soon, and now is a great time to try this is a fun old-fashioned way to make ice cream before summer ends. This is a perfect project to do outside, especially in case there are any leaks or the cans start to sweat.

You will need:

  1. 3 lb. coffee can with lid
  2. 1 lb. coffee can with lid
  3. Rock salt
  4. Crushed ice
  5. 2 cups whipping cream
  6. ½ cup sugar
  7. ½ teaspoon vanilla
  8. 1/4 cup fresh huckleberries

Place 1 lb. can in center of 3 lb. can. Fill 1 lb. can with ice cream ingredients. Cover with its lid. Layer crushed ice and rock salt around the small 1 lb. can. Cover with its lid. Roll the can back and forth for about 15 minutes. You may need to add more ice and rock salt around the smaller can about ten minutes through the rolling stage. You can try different flavors than huckleberries, like mint, chocolate, caramel, or butterscotch.
