Who’s Ready for Some Wolf Point Salsa?

Tomatoes are ripe now, and the Captain found a phenomenal recipe for salsa that will leave you craving more!  Here is the recipe for the infamous Wolf Point Salsa (you can read the history of how the Captain found that here).

WOLF POINT SALSA RECIPE

What you need:

  • 10 POUNDS OF TOMATOES
  • 1 ½ MED ONION (1/2 WHITE, ½ YELLOW, ½ RED)
  • ½ CUP WHITE SUGAR
  • ½ CUP BROWN SUGAR
  • 1 GARLIC CLOVE OR 1 TSP MINCED
  • 2 BELL PEPPERS (GREEN, RED, YELLOW FOR COLOR)
  • ½ PACK CELERY   (DICED)
  • 1 ¾ CUP CIDER VINEGAR
  • 4 TSP KOSHER SALT
  • 1 TBL SPOON BAZIL FLAKES
  • 1 TBL SPOON OREGANO FLAKES
  • 1 TBL SPOON ONION POWDER
  • 1 TBL SPOON GARLIC POWDER
  • 3 FRESH JALAPINOS (LEAVE THE SEEDS IN ONE)

What you do:

SIMMER 2 AND ½ HOURS

Place in Jars for canning and hot water bath for a 20 MINUTE BOILING.
