You caught whitefish but how do you cook them?

There are many ways to enjoy the whitefish that you catch out of Flathead lake. I like to poach them in lemon water and then season with some cajun salt. Simply bring the water to a boil, dump in fillets and wait till water starts boiling again and they are done. I serve them with drawn butter.

Jens Gran from Polson shared a more elaborate recipe that I plan on trying.
Take 1/2 pound of fillets and poach them, one head of cauliflower and poach in the some salt water you lightly boiled fish.(still firm, not cooked) Make a white sauce with 2 plus cups milk, 4 eggs, 2 tbs flour, 2 tbs butter,1/2 tsp nutmeg. Place the fillets and cauliflower in a (spray pan with butter or oil) pan and pour the white sauce over them. Then top with plenty of white shredded cheese. Sprinkle a few bread crumbs on top of cheese. bake at 400 degrees @ 40 minutes . If it gets to dark while cooking , cover with foil.
