MOM MOM’S BEST!!!

Every fish fry, wild game meal, or outdoor picnic needs a great dessert! My Mother made the best. Try this simple but tasty treat at your next party.

Back in the day, Mom Mom always made her cake in my Great Grandmother Wrights cast iron fry pan. I still use the same pan to this day, and did so on Mother’s Day. This recipe is also simple and easy in a Dutch Oven when camping.

1 pkg. yellow cake mix

½ cup melted butter

1 cup brown sugar

1 can sliced pineapple

½ tsp vanilla

Cherries or other berries for inside the pineapple holes.

Heat oven to 350 degrees

Place butter in the cast iron pan and melt. Add brown sugar to pan and stir. Place the pineapple slices into the pan/ skillet. Reserve the juice from the can. Place the berries, or cherries in the pineapple holes.

Make the cake mix as directed but use the reserved pineapple juice instead of water. Add the Vanilla extract. Stir and pour into the pan/skillet overtop the pineapple.

Bake for 45-55 minutes until the sides are brown. Use a knife to cut around the perimeter then invert the cake onto a foil covered tray.

Serve with ice cream or whip cream. Wonderful when warm!
