Louisiana Halibut Soup

What you need.

One to two pounds halibut steaks – cut into one inch cubes

One pound uncooked medium shrimp – cleaned and peeled

One tablespoon canola oil

One cup chopped onion

One cup chopped celery

Half teaspoon dried thyme

Half teaspoon salt

Half teaspoon ground red pepper

Half teaspoon ground black pepper

Two 14 oz. cans diced tomatoes with juice

One 15 oz. can chicken broth

 

 

What you do.

In a large pot add the canola oil and put on medium high heat. Next add all the ingredients except for the tomatoes, shrimp and halibut. Simmer for ten minutes and then add the tomatoes bring to a fast simmer and cook an additional ten minutes. Finally add the fish and shrimp. Cover and simmer another ten minutes, remove from the stove and serve with fresh baked bread.
