Pecan And Walleye Fillets

What you need.

Two pounds of walleye fillets

Butter or a good quality heart safe margarine

Salt and pepper to taste

One tablespoons chopped chives

Four tablespoons coarsely chopped pecans

One tablespoon white raisins or dried currents

Two teaspoons lemon juice

One cup flour

One cup milk

 

What you do.

Begin by melting four to six tablespoons butter and heat it until it begins to turn brown in color. Salt and pepper the fillets, dip in milk and then coat with the flour. Fry until golden brown on each side and remove from pan. To the same pan add another two to three tablespoons butter and the raisins and pecans. Cook for two to three minutes or until the butter begins to brown. Next add the lemon juice to the pecans and scrap all the good drippings from the pan. Pour the sauce over the fillets, sprinkle the chives over the fillets and enjoy with a tossed salad and fresh melons or other chilled fruit.
