What you need:
One pound smoked salmon or trout
Red leaf lettuce
Fresh spinach greens
One cup sliced cucumbers
One medium tomato cut into wedges
One small purple onion sliced
One dozen Italian or Greek olives
Vinaigrette or dressing of choice
What you do:
Gently toss the lettuce, spinach, cucumbers and onions. Arrange olives and tomato wedges over the top of salad. Break up and arrange the smoked salmon over the salad and then drizzle the dressing over the top of completed salad.
