What you need.
One pound perch – cleaned,boned,cooked and cooled
One pound salad shrimp
Four tablespoons margarine or butter
One third cup celery – chopped fine
One third cup onion chopped fine
One third cup green or red bell peppers – chopped fine
One teaspoon black pepper
Half teaspoon garlic salt
One cup bread crumbs
Two cups crushed crackers
Two eggs
Vegetable spray
What you do.
First prepare a cookie sheet by coating with vegetable spray and then set aside until ready to use. Saute the onions, bell pepper and celery with the butter and cook for five minutes on medium heat. Remove from heat and blend with all the ingredients except the crackers. Shape into patties about half an inch thick and two inches wide. Coat all the patties with the cracker crumbs and place on greased cookie sheet. Place the patties in a 400 degree pre heated oven and bake for fifteen minutes. Turn each patty over and bake an additional ten minutes. Do not burn. Remove from oven when golden brown on each side. Serve with cole slaw and fresh fruit.
