Stuffed Bass

What you need.

One cup bread crumbs

One celery stalk diced

One pound medium boiled shrimp-shelled and cleaned – tails removed

One medium to large onion – chopped

One stick butter – cut into two pieces

Quarter teaspoon ground red pepper

Salt and pepper to taste

One egg

Two green onions – sliced with tops

Two to three pounds bass fillets or fish of choice

One cup sliced fresh mushrooms

Quarter cup pine nuts

One clove garlic – minced

 

What you do.

In a large baking dish, coated with vegetable spray, place a layer of fish. Saute the celery, onion, and half stick of butter until onions appear opaque. About five minutes. Now blend them with the bread crumbs, egg, red pepper, shrimp and salt and pepper to taste. Layer the shrimp — bread crumb mixture over the fillets and top off with a layer of fillets. Sprinkle the green onions over the top layer of fish. Now, put in a 350 degree pre heated oven, uncovered, for fifteen to twenty minutes or until fish begins to flake. While the fish is cooking saute the mushrooms, garlic, and pine nuts with the other piece of butter. When you remove the fish from the oven put some mushrooms and pine nut mixture over the top of each serving of fish. Enjoy with a fresh green salad and wine of choice.
