Venison Chili Omelet

What you need.

Half pound ground game meat

One 8 oz. can tomato sauce

One medium tomato – chopped

Four green onions- chopped

Half teaspoon cumin

Half teaspoon oregano

One tablespoon red chili powder

One teaspoon ground black pepper

One clove chopped garlic

One dozen eggs

Four large corn muffins

Monterey Jack Cheese-half cup

(makes four three egg omelets)


What you do.

Take and brown the meat with the garlic. Now, add all the ingredients except the eggs, Green onions and Monterey Jack Cheese. Let simmer for about ten minutes. Now beat three eggs and put in well oiled pan (spray with olive oil) . When eggs begin to firm up add one quarter of the meat mixture and sprinkle with some chopped green onions. Let cook for about two minutes. Now carefully fold over and sprinkle with some cheese and serve with One large corn muffin, some stout coffee and enjoy. This can be a real eye opener.
