Southwestern Roll-ups

What You Need:

Two pounds ground venison or elk

One 28 oz. can whole tomatoes with the juice – cut tomatoes into chunks

One 15 oz. can whole kernel corn

Two tablespoons red chili powder

Half tablespoon oregano

Half teaspoon black pepper

Salt to taste

One small can sliced black olives

One chopped medium onion

Three cloves garlic – chopped

Two packages ten inch corn or flour tortillas

Two cups grated cheddar cheese

Quarter cup light olive oil

Hot sauce of choice

 

What You Do:

Pour the olive oil into a large fry pan and put on medium heat. Add the onion garlic and game meat and brown. Drain off any excess liquid.

Next add the rest of the ingredients (except for the tortillas and cheese) and simmer for twenty minutes. Remove from pan and add a bit of the meat mixture to each tortilla and a bit of cheese and the hot sauce.

Carefully roll up and enjoy. Some folks like to fry the tortillas before stuffing in a bit of oil. It is your choice. Enjoy as a snack or main course.
