Forget the Chips – Salmon Skin Fritters Are “What’s for Dinner”!

salmon-fritter-cl-346835-xSo, you have had some success salmon fishing, as has the Captain and Matt Mackinaw recently at Fort Peck, and you are wondering what to make next with your “wiley prized fish”.  Well, replace your bag of Doritos with some homemade Chinook Salmon Skin Fritters!  They taste great and they will leave the whole family asking for more!  Here is a recipe via myrecipes.com:

Salmon Skin Fritters

Ingredients

  • vegetable oil
  • 6 ozs king salmon (skin, scaled and washed, skin from about 1 side of salmon)
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup all-purpose flour

Preparation

Pour oil to depth of 1 inch into a large heavy skillet; heat to 375° over medium-high heat.

Slice salmon skin into 4- by 1/2-inch strips. Sprinkle with sugar and salt. Dredge strips in flour; fry, in batches, 2 to 3 minutes or until golden. Drain well.

Note: For extra flavor, add 1 tablespoon curry powder or Cajun seasoning to flour.
