LASAGNA

Great Grillers prepare meals that are different and unusual. Any griller can char up some hot dogs and Burgers. It takes a Grill Master to prepare something unique.

Lasagna is a popular food that can be easily made on a grill. This concept works wonderful when camping. Lasagna sounds way better than Hot dogs and Beans.

For this Killer recipe, work with a medium heated grill.

               1 pound of fresh Mozzarella. The Cheese ball works well. Gut in half and thinly slice.

               ½ cup of grated parmesan cheese.

               A pinch of salt. Also, a pinch of red pepper flakes

               2 cloves of grated garlic

               1 tbsp. of olive oil plus a bit more for drizzling

               3 large tomatoes. Thinly slice 2 tomatoes. Grate the 3rd tomato.

               12 no-boil lasagna noodles

               8 cups of baby spinach, about 5 ounces

               1/3 cup of Ricotta cheese

               1/3 cup of fresh herbs like basil, oregano, mint or parsley

Combine the mozzarella, parmesan, red pepper flakes, ½ tsp of salt, most of the garlic. Save about ¼ tsp of garlic in a bowl. Drizzle with olive oil and toss together. Season the tomatoes with salt.

Lay out 4 sheets of heavy-duty aluminum foil. Drizzle each with olive oil. Add one noodle to each sheet. Sprinkle a tbsp of water onto the noodle. Now divide the sliced tomatoes, spinach, cheese, and spices equally. Add a second noodle and repeat. You need 3 noodles per packet. The final top noodle needs to be drizzled with olive oil and another tablespoon of water. Close the foil together into a packet and close securely.

Grill the packets, lid closed, until tender. This should be about 10 minutes per side. Let rest 5 minutes before serving.

Meanwhile, mix together the saved garlic, grated tomatoes, a pinch of salt, and 1 tbsp. of olive oil into a bowl. Open the packets and top with this mixture.

You can also foil wrap some bread that has been buttered and seasoned with garlic and Italian spices and some parmesan cheese. Grilling some Romaine Lettuce will take care of the salad. See Killer Grillin #1 for that recipe.

One great meal that is quick, easy, complete, and off the grill!
