MOUNTAIN MAN MEAT LOAF!!!

Recipes using ground wild game are always welcome in a hunter’s kitchen. Here is a healthy Meat Loaf recipe that is easy and can be made ahead of time.

Freeze the Meat loaf in a pan or cook it ahead of time and put portions in zip lock bags. When you boil water at hunting camp, throw the bagged portions into the water for a warmup. I have also wrapped portions in sealed aluminum foil packs and set them on the wood stove or on the truck engine block, if you are traveling to camp. Do the same with your potatoes.

The baked potatoes are also wonderful handwarmers! Wrap them in foil after heating them up and shove them into your pockets. When they start to get cooler, eat them!

Meat Loaf sandwiches are also a treat. Perfect way to deal with leftovers.

MOUNTAIN MAN MEAT LOAF

2 lbs. ground wild game, 1 tsp of salt and pepper, 1 ½ cups of oats, ½ cup of diced pepper, Dice one small onion, 4 oz. of Cheddar Cheese, ½ cup of milk, 3 eggs.

Mix these ingredients together to create your loaf. If you don’t have a loaf pan, use a cast iron fry pan or bake as a mound.

Bake at 350 degrees for 30 minutes, then add the topping. ¾ cup of ketchup, 2 tbsp brown sugar, 1 tsp of dry mustard. Now put the loaf back into the oven for 30-40 min. longer.

Allow the meat loaf to rest about 15 minutes before serving.

You can certainly add to the recipe and make it your own. Bacon bits or strips over the top always are well received. Chopped tomatoes mixed or layered in the loaf are also a tasty surprise.
