COWBOY CAVIAR!!!

Montana has a lot of great recipes with a western flair. Some recipes are not the best. You may want to hesitate and research on the Rocky Mountain Oysters.

Anyway, Caviar is a wonderful delicacy. Montana has Paddlefish and some sturgeon for some Big Sky Caviar flavor.

This recipe can be used with corn chips, as a dip, or on top of fish in a fish taco. It is so tasty that if you had a spoon, you just might eat it plain out of the bowl. Give this recipe a try and enjoy!

COWBOY CAVIAR

1 can of Black Beans drained and rinsed

1 can of corn drained (fresh steamed corn is also tasty when cut off the cob)

½ Fresh red pepper diced

½ cup Sweet Onion diced (garden fresh is always the best!)

Chopped fresh cilantro to taste

3-5 diced avocados  Don’t be afraid to add some diced tomatoes, zucchini or whatever to make this recipe your own.

Dressing      ¼ cup of olive oil, ¼ cup of Lime juice (you can use lemon juice in a pinch), 2 garlic cloves, pressed, ¾ tsp of salt, 1/8 tsp of pepper, 1 tsp. of Cumin. As a Marylander, I use Old Bay seasoning. Mix dressing and pour over the mixed veggies. Add avocados just before serving.

This relish is wonderful on any Mexican food, Fish Tacos, Dips, or even on hot dogs and burgers!  Spice to taste and make this simple recipe your own.
