Tasty Beaver Recipe

Everybody, especially people who don’t trap, has something to say about people eating beaver.  Trappers hear the jokes all the time…and many trappers create their own jokes about it.  But, believe it or not, there are some pretty darn good recipes for this animal.  One thing not all trappers have done is eat the meat from the furbearing animals they catch.

Here’s one example of what you can try with any wild game…this guy just happened to use the recipe with beaver meat.

Awesome beaver recipe that will make your tummy happy and your taste buds excited! Hope you enjoy- ingredients and steps are as follows ⤵⤵⤵

  • (2) Larger beaver back straps (trimmed silver skin)
  • (6-8) Slices of bacon
  • (2tbs) Olive oil
  • (2) Medium onions (chopped)
  • (4) Cloves of garlic (crushed)
  • (5) Baby yellow potatoes (chopped)
  • (1 Cup) Baby carrots
  • (2) Chili Peppers
  • (1 Cup) Beef or game stock
  • (1) Sprig of Rosemary

Preheat oven to 375 degrees. After trimming silver skin off of loins, cunt into portions. Wrap the portions in bacon strips and secure with tooth picks. Heat cast iron pan (or any oven safe pan) to medium heat and add 2 tbs of olive oil. Place bacon wrapped portions of meat into pan and cook until the bacon is golden and mildly crispy.

Once bacon is golden, remove from pan and plate for the time being. After plating the meat, drain the majority of bacon grease into a bowl. With remainder of grease left in the pan add in the onions and caramelize. Grease can be poured back in from the bowl if needed during caramelizing onions.

When onions are caramelized add in crushed garlic, baby carrots, chili’s and potatoes. Add in one cup of beef stock (or game stock) and bring liquid with contents up to a simmer. When simmering, add one sprig of Rosemary into the liquid and add back in the bacon wrapped beaver loin. While still simmering, remove pan from stove top and place in the preheated oven (no lid). Roast in oven for approximately 30 minutes or until potatoes are tender.

When time has been reached, remove from oven and plate to be consumed.
