Still have some of that tasty venison? Well it is about that time to make some jerky – to bring ice fishing and so forth! Here is my Mom’s special recipe!
Mom’s Famous Elk Jerky Recipe
Cut meat into 1/8 to 1/4 in x 4 to 8 in slices. Marinate in glass dishes overnight in the following brine.
18 oz (2 1/4 cups) soy sauce 50 oz (6cups) water 1 1/2 oz (3T) black pepper 3/4 oz (1 1/2 T) garlic powder 9 oz (1 1/8 cup) brown sugar 4 1/2 oz (1/2 cup) white sugar
Makes 1/2 gallon Cover in fridge
Cook in dehydrator at 165 for 8 to 9 hrs!
