Easy, Cheesy Catfish Casserole

In honor of Downrigger Dale’s recent monster catfish catch at Fort Peck, we are sharing this delicious catfish casserole recipe.  Well, I haven’t actually tried it yet, but it sure looks good!  Keep this in mind the next time you’re out catfishing:

5 min preparation + 30 min cooking

Ingredients

  • 2 lb. catfish, chopped
  • 1 cup Greek yogurt
  • 1 cup cheddar cheese, grated
  • 1 cup skim milk
  • 2 tbsp. basil, minced
  • 2 tbsp. cayenne power
  • ½ tsp. salt
  • ½ tsp. pepper
  • 2 lb. potato, chopped

Directions

Preheat oven to 400 degrees
Dump catfish and potatoes on a large greased baking dish
Sprinkle cayenne powder, salt, and pepper over catfish and potatoes
Combine Greek yogurt and skim milk in a large bowl. Whisk until creamy
Pour yogurt mixture over catfish and potatoes
Sprinkle cheddar cheese over the top
Bake for about 30 minutes or until top is golden brown
