FISH DISH!!!

There are so many great ways to prepare a fresh fish. Tasty dishes of fish are healthy, flavorful, and simple to prepare. Many fish eaters just enjoy fried fish and chip style meals. You can also bake, smoke, broil, or try other quick ways to make fish part of your healthy menus. Here is a simple and tasty way to prepare fresh salmon, trout, walleye, or any type of filet.

This recipe is one that I have used when preparing a quick Guide Shore Lunch. 

                2 lbs. of fish filets. Skin on or off.

Olive oil, Butter,

Garlic,

fresh spinach and parsley

Cherry tomatoes. The mixed colors are fun to add more flavor and color. You can also use whatever fresh veggies are in the garden. Maybe sliced zucchini, squash, etc.

¼ cup or so of cream

1/3 cup of Parmesan cheese

Salt and pepper.

Make the filets into single portion sizes. Presentation of these portions will be a nice addition. You can make the filets with or without the skin.

Start by adding some salt to your filets and place them into a skillet that has a few tbsps. of olive oil in them. My favorite Olive Oil is the Olivellie brand flavored olive oil called Blood Orange. This oil adds a wonderful citrus flavor to the fish.

Fry the filet 2-3 minutes per side starting with the skin side first. Do not overcook. Set the cooked filets aside.

Now prepare the sauce and other ingredients. Mince some garlic and add butter to the pan. Now add sliced cherry tomatoes to the pan. Slowly blend the flavors. Add some fresh grind salt and pepper to the pan. Next you will be adding some spinach leaves to wilt. Once the spinach begins to shrink, add some chopped parsley in the same manner.

As the leafy additions become wilted, add some cream and parmesan cheese to the pan. Amounts vary based on how much fish you are cooking. Do not overcook. You want a creamy sauce and warmed, soft veggies.

Once the mix is creamy and blended, place the fish back into the pan and simmer for 3-5 minutes, depending on the heat of your grill, fire, or stove.

Serve with the veggie sauce on the plate and the filets on top. Drizzle some sauce over the fish and garnish. This recipe looks fancy, is tasty, and fast to prepare. You will only need one pan and the ingredients are easy to carry.

A nice side of fresh French bread and butter will top off the meal nicely.
