What you need:
1 pound venison breakfast sausage – make into serving-size patties
1 fresh tomato diced
2 large potatoes boiled and diced
1/2 green bell pepper diced
1 small onion diced
4 ounces mushrooms sliced
Salt and pepper to taste
Hot sauce of choice
What you do:
Spray a skillet with vegetable oil. Fry the venison sausage, then remove and keep it warm.
In the same pan brown the diced potatoes. Now add the rest of the ingredients except for the hot sauce. When all the vegetables are hot they are done.
On a large serving platter place the potatoes and vegetable mixture and then arrange the sausage on the same platter.
Serve with hot sauce on the side and Texas-style toast, coffee and fresh fruit.
