Jalapeño & Cheese Venison Snack Sticks – Yum

Think of these as the ultimate “trail-to-table” power move. Venison leveled it up with a sharp kick of jalapeño and pockets of melty cheddar that actually show up to the party. Whether you’re halfway up a mountain or just halfway through a long Tuesday, these snack sticks deliver that perfect snap and a heat level that’s more “bold high-five” than “emergency glass of milk.” It’s wild game, refined—and significantly more exciting than that protein bar at the bottom of your bag! Ingredients:
✅ 2 lbs ground venison
✅ ½ lb ground beef or pork fat (for moisture)
✅ 1 cup shredded cheddar cheese
✅ 2 jalapeños, finely diced
✅ 2 tbsp Worcestershire sauce
✅ 1 tbsp smoked paprika
✅ 1 tbsp garlic powder
✅ 1 tbsp onion powder
✅ 1 tsp black pepper
✅ 1 tsp salt
✅ 1 tsp curing salt (if smoking)
✅ ¼ cup ice-cold water

Directions:
1️⃣ In a large bowl, mix venison, beef fat, Worcestershire sauce, seasonings, and water until well combined.
2️⃣ Fold in diced jalapeños and cheddar cheese.
3️⃣ Stuff the mixture into collagen snack stick casings.
4️⃣ Smoke at 175°F (80°C) for 4-5 hours until internal temp reaches 155°F (68°C), or bake at 200°F (95°C) until done.
5️⃣ Let cool, then slice and enjoy!
