Cooking with Kokanee Quinn: The Balls That Launched a Thousand Breakfasts

They say the best recipes aren’t found — they’re hunted. Kokanee Quinn spent quite some time on the trail of the very best: food blogs, hunting forums, splatter-stained cookbooks, every venison entry she could stalk down. Most were good. One was awesome. After running every contender past a single, ruthless standard — would it earn a permanent spot at the camp table? — Quinn finally struck gold (golden, actually, and crispy) and, true to her word, brought the best of the best back to share. What follows is that discovery.

Let’s call it what it is: breakfast meatball diplomacy. One and a half pounds of ground venison get a half pound of pork — the pork lending the fat the deer left behind — plus the full breakfast-sausage treatment: brown sugar, sage, marjoram, pepper, a pinch of salt, and a dare of red pepper flakes. In a second bowl, live your best biscuit life: flour, baking powder, white sugar, salt. Then marry the two with a full pound of shredded cheddar and a cup of milk, and work it by hand until the dough turns sticky and opinionated. The cheese does the heavy lifting here, releasing just enough moisture to bake them to perfection with zero added grease. Roll golf-ball-sized rounds, packed tight like they owe you money, and bake at 375°F — 20 minutes, one flip, 10 more — until they emerge burnished, crackly, and impossible to ignore.

The only genuinely hard part? Choosing their destiny: maple syrup, hot sauce, barbecue sauce, or a throne beside eggs and hotcakes. Feeling festive — tuck dried cranberries into the mix, or bake mini patties in a muffin tin and crown each with a fried egg. Feeding a hunting camp — fold in green chiles and onions, and watch them vanish faster than the herd.
